INGREDIENTS:
- 1 lb. Rotini pasta noodles
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 6 oz. can of sliced black olives
- ½ pound of Asiago cheese or parmesan
- 2 cups grape tomatoes, halved
- For Dressing:
- ¾ cup olive oil
- ¼ - ½ cup Rustlin’ Rob’s Raspberry Balsamic Vinegar
- 2 tbsp. of Italian dressing (we used Rustlin' Rob's Triple Cheese Vinaigrette)
- 2 tbsp. fresh herbs (parsley or oregano)
- Salt and pepper to taste
DIRECTIONS:
- Cook pasta according to directions on box.
- In a large bowl mix peppers, olives, cheese, tomatoes and pasta.
- Combine all dressing ingredients in a separate bowl, add to salad, and toss.
- Refrigerate for 1 hour. Serve and Enjoy!
